Sneaky Sugar-Free Snickerdoodle Muffins

Ingredients
  • 1 whole egg
  • 2 tbsp cassava flour
  • 2 tbsp coconut flour
  • 1 tbsp vanilla extract
  • 1.5 cup 145g avocado
  • 2 tbsp maca powder
  • 3/4 cup zucchini or summer squash
  • 2 tbsp coconut butter
  • 1 tbsp cinnamon
  • 1/4 tsp sea salt
  • 1.4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp lakankto or 1/4 banana
  • 1/4 cup almond milk
Instructions
  1. Add all ingredients to a high speed blender, blend until creamy
  2. Bake in a coconut oiled muffin pan for 25-28 minutes at 350
