Being Summer time, I find myself craving all the hydrating greens over any other type of meal, due to the extra sweat and time spent in the sun. What better way to quench your bodies thirst other than a salad loaded with all the hydrating vegetables? Salad doesn’t necessarily have to mean an itsty-bitsy tiny winy yellow polka dot bikini – if you catch where I’m going! The powerful nutrient possibilities are endless with salads! The rest of the salad is a simple toss of up of various veggies, spices and herbs that shine bright in Mexican cuisine like cilantro, lime, onion, bell peppers, plantains and a simple garlic, cumin and Chile powder to spice!
