It’s super simple to make and stores great in the fridge for about 2 weeks.
This cheez dip is made from cashews and one of my favorite superfoods, nutritional yeast, for an incredibly rich cheddar flavor! You’d never guess it was lacking actual cheese.
Nutritional yeast is actually an inactive form of yeast that has a very distinct cheddar flavor to it. It’s very high in B vitamins and protein. It is gluten free, contains lots of fiber to support your digestive system, and is a great source of folic acid, for all the mama birds and mama birds to be out there! Folic acid helps to prevent spinal bifida and other birth defects.
It looks like little yellow flakes and is usually sold in the bulk section of the market.
Per 2 tbsp of nutritional yeast you have:
- 8g protein
- 5g carbohydrates
- 4g fiber
- 1/2 cup raw cashews soaked for about 4 hours and then drained
- 1/8 cup water
- 1/8 cup nutritional yeast
- 1 tbsp lemon juice
- 2 tsp minced garlic
- 1 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- dash of sea salt
- dash of red pepper flakes
Blend all ingredients in a high speed blender for 1-2 minutes
Store in an air tight jar in the fridge for up to 2 weeks
